What we do know is that the drink became a sensation, helping to define the tiki cocktail movement. Originally created to showcase the depth of a well-aged rum, the Mai Tai cocktail balances richness, sweetness, and citrus to create a refreshing yet complex drink.

  • 15ml dark rum (to float on top)

  • Ice

  • Lime wheel (for garnish)

Method:

  1. Add Torbay Rum, lime juice, orgeat syrup, and orange liqueur (we use cointreau) to a cocktail shaker with ice.

  2. Shake well and pour contents into a glass. The ice should be slightly crushed after shaking.

  3. Slowly pour the dark rum over the back of a spoon to create a float.
